The Slanted Door: New Vietnamese Cuisine

I first visited Vietnam in September 1996. It impressed me in many ways, but what impressed me the most was its cuisine. My friend, who was stationed in Ho Chi Minh City, took me to several restaurants he knew. The food that I experienced in those restaurants was excellent. Their dishes were very well presented and visually pleasing. The spring rolls, which were made from rice paper, were fresh and lightly seasoned; they were best suited for people new to the country and who were tired after their long plane trip. The chicken based rice noodle soup was also slightly salty and flavorful. I later learned that the Vietnamese are proud of their cuisine as it is a mix of native Chinese, French and Vietnamese influences. His pride is quite understandable.

Although it is not easy to find an authentic Vietnamese restaurant in Japan, I have found many good Vietnamese restaurants in San Francisco and in the Bay Area. They are generally good; however, he was looking for something more. There had to be a restaurant in this area that served the same amazing food that I had in Ho Chi Minh City and Hanoi.

It was my wife who told me about Slanted Door after learning about the restaurant from her Vietnamese friends. I would have liked to know the reason for the impressive Slanted Door name, but there was nothing on their website to tell me why. The restaurant is located in Ferry Building 1, near the Bay Bridge, and has great views of the Bay Bridge. There is a bar to the left of the entrance.

The dining room is located along the shoreline of the bay and there is an outdoor patio dining area. The interior of the restaurant is modern and futuristic. I like how the windows facing the shoreline of the bay bring in the sunlight.

Dinner was excellent. My wife ordered spring rolls as an appetizer, and I ordered the green papaya and oyster salad. My wife ordered crabmeat noodles for main course. I ordered the restaurant’s famous “shaky beef”. My wife loved her food. Later he told me that the restaurant had the best Vietnamese-style dishes he had ever tasted. My oysters were fresh and tasty, and I loved my meat dish. The meat was tender and juicy. The sauce was a combination of Vietnamese-style fruity sweet spicy sauce and a little sour vinegar. I told my wife how good the meat was and she took an interest in my plate, even though she doesn’t usually eat meat. He tasted a bit and ended up eating half.

The only problem with this restaurant is that it is very popular and full of people. As we went there without a reservation, we had to kill over an hour before getting our table. Although it was worth the wait, we recommend making a reservation for lunch and dinner.

Iranian nuclear threats

I have been a long time reader. I read with the expectation of entertainment or enlightenment. I have been a writer for much less time, but I readily recognize the monumental burden of these goals.

Consequently, there are two types of writers. The first can be called responsible. These writers prioritize the needs and wants of their readers. They use an outline and write with an organized plan. The second can be called cathartic. They write to get rid of what is inside. They do not manipulate their words to achieve a more advantageous position, they just run with them. They spit out their thoughts like tobacco from the hand of a ranch; sometimes they are lucky and go to the spittoon. They tell their stories as they happened, as I do now.

Life is full of crucial moments, and I can clearly remember one that occurred at the beginning of my fourteen years of life. Inadvertently and innocently, I saw something that I was not supposed to see; I witnessed something that was not meant for me to witness. But no one can stop seeing what is seen. Oh, how many times did I wish I could!

It was the middle of summer, my freshman year of high school was in and out of the water within walking distance, and I was filled with anxiety and anticipation. My best friend Cara Hale and I spent the weekend at her lake house on July 4th. Her parents, whom she had grown to love, were throwing a barbecue party with music, fireworks, and all things patriotic. It was an adult party, so we were relegated to the top floor, which contained a TV room, a small kitchen, a bedroom, and a bathroom. We were armed with movies and nail polish and were eager to “do our thing” while the adults partied downstairs. Cara even suggested we sneak downstairs and “share” a bottle of bootleg beer, our first.

It was easy enough as all the adults were outside, scattered around the lake shore, watching the occasional fireworks shooting their rainbow of colors over the water. We put the kidnapped bottles in the upstairs mini-fridge and went out to join the adults for the show and to say goodbye to my parents and my Uncle Joe, who had been friends with Cara’s father since college.

As the party dispersed and the noise from downstairs lessened with each creak of the gravel driveway, we closed the bedroom door, dimmed the lights, and opened our illegal loot. After the first two sips, I realized that it would only go on long enough to seem like I was sharing the experience, and that became easier to do with Cara sipping her bottle and then “sharing” most of mine.

Fast forward, past the giggles and gossip, and an hour later I found myself next to Cara snoring while awake wondering what high school boys would be like and how I would wear my hair that first day. In fact, I was so awake that I decided to move into the living room and start reading “The Odyssey.” I knew it would be assigned in freshman English and wanted to take a leap to make a good first impression.

After turning on the little table lamp, I saw the beer bottles placed accusingly as evidence of what we had done. We had never thought about how to get rid of them without getting caught, we had only thought about how to acquire them without getting caught. He knew that if Mrs. H. saw them in the trash upstairs, Cara would be deep inside. He had very strict parents who went to church (despite his own tendency to party). My life was a little more flexible.

I decided to bring the bottles downstairs right then and there, while the house was sleeping, so I wouldn’t have to worry about it in the morning, especially since I wasn’t sure when (and under what conditions) Cara would wake up. I gently opened the door upstairs and, hardly breathing, began to descend slowly and silently, one step at a time. Halfway there, where the staircase turned into the living room, I froze. It was the sound that first caught my attention; had it come from me? Then I saw them. The unmistakable face of Mrs. H. on the couch under the unmistakable melon polo shirt now pulled up to my Uncle Joe’s shoulders. The same broad, tanned shoulders that took me on too many long walks with my family in the great outdoors. Those iconic shoulders that from now until forever would be stained with Ms. H’s vision. H.’s bright red nails dig into them.

Lord, please erase this vision from my memory, I thought, as I stood wide-eyed and standing stiffly long enough for the reality of what I was seeing to settle on me. Then, legs shaking and heart pounding, wrapped in confusion, I quietly backed my way up the stairs, closing the door behind me, two beer bottles still in my hands. I grabbed my jeans that were scattered on the floor, wrapped a bottle around each leg, piled them up, and tucked them into the bottom of my duffel bag. I crawled into the big bed next to semi-conscious Cara and tried not to stare at the vision playing mercilessly inside my tightly closed lids.

What is a newly crowned fourteen-year-old supposed to do with a secret like that? Tell Cara, potentially devastating her family? Tell my father that his brother-in-law (and partner in law) cheated on his own sister? Blackmailing the culprits wasn’t even a concept, and I knew enough about the school’s gossip ring that if I told any of my other friends, it would no longer be a secret. Suddenly I was carrying a burden that was imposed on me, and I think that was the moment when I started to sink a little on my shoulders.

I managed to survive the ordeal, feigning enough fatigue the next morning not to arouse suspicion, and got out quickly. For reasons I cannot explain, instead of putting the empty bottles inside our home garbage bag to pick them up the next day, I surreptitiously placed them in the recycling bin of the Baptist minister who lived across the street. There they sat, right on top of the plastic and cardboard, in full view of the neighborhood’s morning dog walkers. I often wonder what prompted me to do that. Was he trying to change any gossip that might arise about an innocent victim, or was it a passive-aggressive attempt to turn the bird over in fair adulthood? To this day, I’m still not sure.

Four years later, looking back over the horizon to my high school years and looking forward to the college experience, I was filled with anxiety and anticipation. I decided that in order to prepare for the next phase of my life, I needed to stand with firm shoulders to the challenge. It was time to get rid of this burden, to relieve myself of this unintended and extremely heavy burden. But by doing so, would she let him rest or give him immortality? Is my telling of this story now responsible, cathartic, or both? That is my secret, not one that I have been forced to carry, but one that I have created of my own free will.

Wildlife in Trondheim, Norway

There are many species of wild animals in Norway such as: moose, lynx, squirrels, vipers, wolves, foxes, roa deer, snakes, deer, birds, insects, wild cats, badgers and bears.

Most of these animals are not dangerous as long as they do not feel threatened, especially during the mating and calving seasons.

You can climb the mountains, forests, woods, fjords without worrying about the wild animals hurting you.

Moose are the largest animals in the Norwegian forests. The adult male elk can be up to 240 cm tall and weigh 850 kg.

Many Norwegians who have hunting permits and licenses go hunting during the hunting season in the fall and winter.

Hunting moose with dog (hound) is an ancient tradition. The Norwegians consider it good training. Some of the moose hounds are born to be great hunters!

Do you know why moose have hair? The reason is that the fur keeps them warm and sometimes they even have fur on their horns! These moose are sick and need medical attention. Moose can be very bad if they feel threatened! Some people say that moose are the rebels of the forest!

Reindeer or caribou hunters are good at finding caribou, they smell their scent in the air or follow their tracks. In Norway there are several types of moose hunting such as:

posteringsjakt (in Norwegian): hunters chase the animal following its tracks

smygjakt (in Norwegian): a hunter senses the presence of an animal.

drivjakt (English: noise): make some noises to send the animal to a place where hunters wait patiently (this method is mainly used in southern Norway). Based on my observations, when deer hear your rattle, they respond differently! One, the leader (I suppose) will come to investigate where the noise is coming from, two will flee and seven will ignore it. Hunter’s patience and perseverance are very important factors for success.

Trondheim’s animals are under the protection of the Norwegian environmental authorities.

Squirrels: They are everywhere in Norway, especially in the tops of the forest pines. Red squirrels (ekorn in Norwegian) live mainly in Upper North and Finnmark. They are very cute, but not as domesticated as squirrels in the United States.

Lynx: Lynx in Trondelag can be found in forests and mountains. Sometimes they attack sheep, which is unpleasant for farmers in animal production. They are wild animals but so beautiful. They live in central and northern Norway. They usually eat cats and other small animals.

Hares: They live in meadows and forests and their fur changes color with the seasons, brown in summer and white in winter. Hares live around Trondheim and other cities in central Norway.

Vipers: They were observed in Trøndelag. I have seen one in the north of Trøndelag on the mountain. If a snake bites someone, it gives the victim a slight fever. Its poison does not kill at all. They eat mice and other small animals and bite if they feel threatened. In the summer of 2008 many snakes were discovered in the Jonsvatnet area of ​​Trondheim. That’s why people, especially runners and hikers, were warned about snakes in those areas.

Wolves are not many in Norway. They are protected by the Norwegian natural environment. They live in the forest and eat small animals. They can also be found in the upper north and very few in the south of Trondelag.

Foxes and brown bears live in the forest. Brown bears (Bjørn) are few in Trøndelag, they live underground or inside holes.

Whale (Hval)

Whales live in northern Norway. They are faithful and beautiful creatures.

If you ever get a chance to travel to northern Norway, I suggest you try the whale safari (hvalsafari). You come astonishingly close to them as close as 300 meters.

The Scandinavian countries are the only countries that allow whaling. There are some arguments about whaling to keep the ecological cycle in balance, as they feed on large populations of fish. Whales are not in danger from their annual hunt in Norway

Birds (fugl): There are several birds in Trondheim, some of them very curious and beautiful. The Commontern in Norwegian Makrellterne (Latin: Sterna hirundo) is a seabird and lives in Europe, Asia, and central North America. They are also called tern. They eat fish and other small sea creatures. They live in colonies on coasts, islands, and freshwater lakes. They are very romantic and affectionate birds. The male bird cares for the female by offering her fish, which is part of the courtship display. They reach an age of 23 years or more.

The oyster hunter in Norwegian Kjeld can be seen in different colors in the world. They are black and white or black.

They feed on earthworms, insect larvae, and coastal oyster fishers feed on gastropods and polychaete worms. Oyster fishers are monogamous and very territorial birds, especially during the breeding season!

The male oyster hunter is very resourceful and faithful to the female! They make their nests on the ground that can be placed in a place with good visibility.

Oyster fishermen’s eggs are delicious! It’s a prank! I don’t know how their eggs taste. Ok … let’s go back to the eggs. They lay one to four eggs and the females take care of the eggs while the males engage in further defense of the territory.
