Healthy Palak Moong Dal

Cooking time: 30 minutes

for 4 people

Ingredients:

1 cup yellow moong dal

1 bunch of spinach finely chopped or about 2 Cups of spinach (Palak)

1 green chili

1 tablespoon grated ginger

Salt to taste

1 teaspoon red chili powder

½ teaspoon of turmeric powder

1 tablespoon butter

A pinch of asafoetida (hing)

1 teaspoon cumin seeds

juice of a lemon

fresh coriander leaves

Cooking method:

Soak the green moong dal in enough water in a bowl for 15 minutes and drain.

Pressure cook the dal along with 4 cups of water, salt, ginger, and green chili.

Cook for 1 – 2 hiss over low heat. Allow the steam to release naturally from the pressure cooker.

Heat the ghee in a pan. Add cumin seeds and hing. Cook for a second.

Add the chopped spinach and cook until wilted.

For the cooked dal in the pan and stir to combine well. Cook over low heat for 10 minutes.

Add spices, taste and adjust the amount of salt.

If the consistency is too thick, add a little more water.

Drizzle with lemon juice and garnish with fresh cilantro.

Serve the healthy palak moong dal warm.
